When a town is dominated by the wine industry, wine also establishes the town’s hierarchy. Volpia, in the Chianti region of Italy, is more or less a loose collection of buildings, but even the buildings submit to the prevailing order. The “best” wine - the Chianti reserve from the Volpia winery - lays claim to the “best” space: the basement of the town’s old church, quite possibly as ancient and revered as Chianti’s wine-making tradition.
